BaNaNa muffins

Hey guys, I see everyone posting recipes so I thought I'd post mine. I decided to make a batch of muffins today (it was going to be bread, but my mom threw out the yeast and forgot to buy more...:sad: ) and we had an excess of over-ripe bananas. Took me about 10 minutes to prep.
Preheat your oven to 350 degrees.
Mix in one bowl:
1 egg, beaten
1/2 cup honey
1/3 cup butter or veggie oil (Don't use margarine... try apple sauce instead, it makes a great sub in)
3 mashed over-ripe bananas
tsp vanilla extract (the good stuff)
1/4 cup yogurt or sour cream
Mix in another bowl:
1/2 cup whole wheat flour
1 cup white flour
1 tsp baking powder
1 tsp baking soda
pinch of salt (I used salted butter... if you do that, leave out the salt)
1 tsp nutmeg
1 tsp cinnamon
You can also add a half cup of chopped walnuts
Now combine the wet and dry ingredients until mixed, don't over mix them or they'll get tough. Spoon them into a lightly greased muffin tin. Bake for about 15-20 minutes in the 350 degree oven, or until you can stick a tooth pick in them and pull it out clean. Makes 10 muffins at less than 200 calories each :happy:

:noway: Less then 200 calories!!! Sounds yummy! I'll try this the next time I have bananas left.

Eeek, don't throw out bananas, they freeze soooo well for smoothies and muffins.
I just double checked..... about 215 calories for the ones made with butter, and 165 for the ones with apple sauce instead. That's without the chopped nuts.0
