Cajun Chicken Quinoa

I stubbled across a recipe on the internet, however I adjusted it to make it healthier and to my taste! ENJOY!

Ingredients
- Quinoa 1 Cup
- Chicken Stock cube
- Chicken 200-250g
- 1 Red Pepper
- Cajun Seasoning 1 tbsp
- 1 Cal Spray (or PAM)
- 1 Onion
- Coriander

Pretty easy to make just...

Dice the Chicken and add Cajun Seasoning
Toss together and oven cook for 25 mins at 190c
whilst the chicken is cooking, boil the Quinoa in the chicken stock
this takes about 20-25 mins
about 5 mins before the chicken and quinoa is ready chop and fry the onion, coriander and pepper
once fried drain the Quinoa and add it to your pan and mix in with the veg and then the chicken (with juices)
stir throughly and add more seasoning if you fancy (I did)

350 cals, 24.3g Protein, 6.9g Sugar, 2.0g Saturated Fat
