Amazingly Delicious Breakfast!

Just tried out this recipe - and it is FABULOUS!! And.. pretty filling too.. low cal and low carb!

1 lb breakfast sausage (any kind you like - browned)
12 large eggs
1 cup shredded cheddar cheese (or any kind you like, add more or less depending on your taste)
salt and pepper to taste
-here you can add any extra veggies or seasonings, I added a little paprika and oregano.

Preheat oven to 375
Mix all ingredients (so eggs are scrambled)
Spray 12 cup muffin pan with no stick spray
Pour egg mixture into each cup evenly (be aware they are going to rise just a little bit)
Bake for 30 min, cool for 5 and serve.

I'm taking the leftovers and tossing them in the freezer for a quick breakfast on the go :)
