P90X and Eating

I'm on Week 9 of P90X - not doing their recommended nutrition plan but I'm counting calories religiously. I used to eat between 1600 to 1800 calories and I was fine with that, but I noticed that within the last 2 weeks, I have been extremely hungry. This week I decided to increase my intake by adding 200 - 400 more cal and I am still hungry. I'm pretty good with meeting my nutritional needs; I eat lean protein and I usually would average 30 to 35 g of fiber daily. I drink at least 1000 oz of water. I have a sedentary desk job but with me doing P90X, I know I'm at least considered moderately active that is why I shoot for at least 2000 calories per day.

My stats: 5'4, very small frame, 115 lbs, 30 years old, eating 6 to 8 meals a day 1800 - 2400 cal/day

I'm hoping someone can help me figure out what's wrong and what I need to do to 'cure' this hunger issue.
