Hi Everyone! Hope you are all having a great day! :flowerforyou:

I am in need of low carb dinner ideas. I am restricting my carbs after 4pm. Tonight my fiance is planning to have BLTs for dinner. I figured I would use the lettuce in place of bread, but that doesn't seem very filling, and I need about 200 more calories for the day. Tonight needs to be a quick and easy dinner (hence the BLTs). Any suggestions would be appreciated!

hmm... should I use Ranch dressing to make up for the calories I have left? If I have 4 pieces of bacon, tomato, lettuce, I still have around 150 calories left over for the day. Maybe I will add some kidney beans...?

Kidney beans are not really low carb. What about adding more veggies or else adding a diced up cooked chicken breast?

Right, no kidney beans then. I went to buy chicken breast last night and it was 4.99/lb. I just can't make myself pay that much. Maybe a can of tuna?

Actually, beans - especially kidney beans are a good source and relatively low in carbs.............I follow a low carb plan and I eat a variety of beans and legumes. Beans are very healthy for you, low in calories, good source of protein to go along with the BLT fixings and HIGH in fiber and other nutrients.

They are 14g carbs per half cup, with another 7g of fiber in there, so essentially there are only 7 grams of digestible carbs because following a low carb plan, you always subtract the fiber because that part is indigestible.

Thanks for the advice. I ended up sauteeing onions, green pepper, fresh mushrooms, and tomato and making 4 pieces of bacon. I crumbled the bacon in with the veggies and just ate that. Kind of like an omlette without the egg since I dont like eggs!
