Y'all, I love this pizza I make. It's a veggie pizza but you can add meats if you like. Just wanted to share this. It's so easy and quick. Even my hubby loves it!

2 Joseph's Flax, Oat Bran & Whole Wheat Flour Pita Breads
2 tbsp. EVOO
1/4 cup Newman's Pesto Tomato sauce
2 cups baby spinach, fresh
1/2 cup julienned red onions
1/2 cup julienned red, green, or yellow peppers - your choice, really
1 wedge Laughing Cow Garlic & Herb Cheese
1 wedge Laughing Cow French Onion Cheese
1/2 cup mushrooms sliced thin
Kosher salt and fresh ground black pepper to taste

Preheat oven to 375.
Place the 2 pita breads on a baking sheet. Brush both pitas with the EVOO. Next, divide the Newman's sauce and spread evenly over each pita. Now, just build your pizza! Spinach first, then red onions and peppers. Cut slivers of the Laughing Cow Cheeses over the 2 pizzas. Add the mushrooms. Salt and pepper to taste. I also like to shake some red pepper flakes over the pizzas before putting them in the oven. I'm a spicy-a-holic! The hotter the better.

Put the pizzas in the oven and bake for about 20 minutes. To the crispness you like, really. When cooked to desired crispness, remove from oven, cut into four and enjoy!

Serves 2.

I hope y'all try this. It really is awesome. Play with the ingredients and make your own!

  • ya my favorite thing to eat these days are candy but im tring to stay off the candy so i dont get fat but my other favorite thing to eat is fruit:mad: :mad: :devil: :brokenheart:

    I can't seem to get enough fruit, cereal and diet sprite zero.

    I have fruit almost every day since Easter.....

    I've been officially addicted to whole wheat pita pockets and sabra classic hummus for 2 months. I could eat it for every meal but I've managed to keep it to once-right after I leave the gym to keep me from binging once I get home.

    I am currently addicted to Balance Bar- Cookie Dough Flavor is it delicious and a perfect snack yummy

    Brittany, that hummus sounds great. I didn't think about it. I could make pita chips and bake them in the oven and eat them with the hummus. That'd be a great snack. Thanks.

    The gym?! GOD I MISS THE GYM! I haven't been able to go since the Thursday before Easter. Maybe next week I'll be able to get back to the gym.

    Hmmm, that pizza sounds tempting..and I happen to have all the basic ingredients in the fridge...Have you run the numbers on it yet, how many cals etc. I know it would vary based on what you put on it, but curious to see what you get. I may have to try this tomorrow!
