Zero Calorie Sweet (and a little spicy) Pickle Relish
No, sweet pickle relish isn't that high in calories to begin with (Vlasic's is only 15 calories per Tbsp), but I wanted to get rid of even those calories in my tuna salad recipe. So, I found that I can buy Vlasic's No Sugar Added Bread & Butter pickles (0 calories) at the local grocery, and make my own in a couple of minutes. Pour off the liquid into a measuring cup, and then toss all the pickles into a small food processor. Process for about 15 seconds or so. Pour your "relish" back into the original jar (there will be some liquid from the processing). Add back as much of the other liquid as you want until you get the desired consistency. I ended up dumping most of the liquid, but poured in the last bit which contained some of the pickling spices.
Sorry if this is too stupid for the board, but it's useful to me, so I thought it might be useful to others. Also, the Vlasic NSA Bread & Butter are pretty tasty unchopped, too.
