In an effort to eat healthier I am going to try and precook some things today for the week. I usually start the week off eating healthy then by Wed evening I'm tired and do not feel like cooking and end up eating out for the rest of the week.

I was wondering if I were to cook a bunch of chicken today that I can use to mix in salads or fajitas or whatever I desire how long would it be good for?

I would generally think cooked food is good for about 3-5 days if stored in a fridge. If you will need it from Wednesday, you could freeze it and then defrost it on the day you want it.

3 - 4 days I reckon, a week sounds a long time but then again I am 'funny' with this kind of thing...

I'm extremely funny with this kind of thing and wont trust meats and fish beyond 2 days, If I buy deli meats they are eaten within 48 hours of purchase or they go to the cats, same with sealed pre packed deli meats but I have done similar to what you are wanting to do. I froze the portions taking some out each day for the next day...will safely get a week and well beyond out of doing it this way.

Personally wouldn't want to go over 3 days and even then the third day I don't like doing. I tend to make my lunches in batches of 2 days. So do Monday and Tuesday together. Usually make a single one Wednesday as my other half has her dinner at work on Wednesday and then I do a Thursday Friday batch.
