Honey Molasses Chicken

I made this today and it was super delicious. I will keep this one on file for future reference. A few things I will do different next time: Use boneless skinless chicken breasts. I love dark meat on the bone, but the work it takes to take the skin off a chicken drumstick is just ridiculous. I also will not use the olive oil to brown the chicken and instead just use a spray. And lastly, I used 2tbsp brown sugar and glad I did. I think if I didn't it would've been too acidic tasting for my liking.
HONEY- MOLASSES CHICKEN DRUMSTICKS

SAUCE:
1 Tbs brown sugar
2 Tbs water
2 Tbs honey
2 Tbs balsamic vinegar
1 Tbs dijon mustard
1 Tbs molasses
1 tsp minced garlic
CHICKEN:
1 tsp olive oil
6 chicken drumsticks, skin removed
½ tsp kosher salt
¼ tsp freshly ground black pepper
1. Combine sauce ingredients in a small bowl; whisk together and set aside.
2. Heat oil in a large nonstick skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add chicken to pan, browning on all sides. Add honey mixture to pan, turning chicken to coat. Reduce heat to medium-low. Cover and cook 15 minutes or until chicken is done, turning chicken every 5 minutes. Uncover and cook an additional minute or until mixture is thick and a mahogany color, and chicken is well coated. Remove from heat; serve immediately, or cool before refrigerating.
Servings: 3
Yield: 2 drumsticks per serving
