Fresh Artichokes...how do I cook it??

Ok, so I remember my mom making these when I was younger and I think she steamed it? but Im not sure! I remember liking the taste and how it was fun to pull apart and eat it.

I got 2 nice fresh whole ones on sale the other day and want to make them to go with dinner tonight.

Any advice on how I should cook it?

I remember eating it with mayo also.... any other suggestions??

    I steam them in a pot with about 1" of water or so. Yummy - but would also like suggestions on what to dip them in - we always used melted butter :laugh:

    I bet you could google a yogurt & dill dip - or make one up - that would taste really good I'm thinking! I may have to call dh and have him pick some up on his grocery run today!

    ohhhhh yeah!! could totally make my own dip concoction with plain yogurt. I have a tub in the fridge! Thanks!! Great idea!

    Oh and on the steaming... how do I know its done???

    Let me know what you decide to do for the dip - they have some on sale at Albertsons this week, I may have to get some!! You got me droolin' over here :laugh:

    (Funny how I get all excited about veggies now, instead of cheeseburgers LOL)

    You know its done when a leaf will pull easily from the artichoke, I think about 25-30 min depending on how big the artichokes are. You can throw some lemon in with the steaming liquid too, will give the artichoke a nice lemony scent and taste.

    make that yogurt dip out of Fage 0% loaded with protein, no fat, it has a great natural tang, you could add garlic and finely chopped tomato and onions, kind of a salsa yogurt dip, yummmmm! Steam them for a long time and don't forget to take the kitchen scissors to all those sharp thorny tips! The heart is the best after you scrape off the thistle like fuzz in the middle!

    Also really yummy with a honey mustard dip!!! (I rediscovered artichokes a few months ago -- I too remembered how fun they were to eat growing up).

    Good question!!! Thanks! I've always wanted to try cooking artichokes but had no idea what to do with them before OR after I cooked them!!!!

    ok, so this is what I did...

    Cut off the stem, then sliced off the top part.
    Snipped off all the thistle things I could see.
    Gave it a Lemon Water Steaming for about 30 minutes.
    Pulled it out and mixed me up some dip.

    For the dip I used:
    About 1/2 cup of fat free plain yogurt
    2 tablespoons of fat free sour cream
    1 tsp dried dill
    1 Roma tomato diced
    1 tsp minced garlic
    some freshly grounded black pepper and a dash of garlic salt.

    Stirred that all together and used that to dip the artichoke petals in.
    WOW!!! It was great!! I ate the WHOLE FRICKEN THING BY MYSELF!! :laugh: :laugh:
    Will definitely be making this again!! What a great lunch idea too!

    Even just the dip is good and would be great with some other type of veggies to dunk in it.

    Bravo, you took everyone's advice and made it your own! sounds like it was yummy and nutritious! What were the calorie counts for your dish
