Healthy Version of Huevos Racheros

This morning I tried to make something different for my wife and I. Did the following and it came out great for only 200 calories a person!

Per Serving:
3 servings liquid egg whites
1/4 cup black beans
1/2 of container of fat free plain greek yogurt
1 teaspoon of fat free feta
1 tablespoon of mild salsa
1 coco light crisp (or any rice cake)

I started making the egg whites scrambled. Before they were getting done i put in the black beans and feta. On a plate i crunched up one of the puffs (instead of tortilla chips). Then i plated the eggs/beans/feta. On top I put the scoop of greek yogurt and the salsa.

It came out great!
