Help! I need a quick and easy chicken recipe - Something that not only dieting me but the rest of my family will eat!

    Kids here? My kids favs are shake and bake nuggets made from boneless breast meat. They also like stuffed chicken, I make it with a box of stuffing mix, cut the boneless skinless breast half way through stuff with mix, bake. They also like chicken wraps, I use pizza sauce, veggies, cheese and strips of cooked chicken, wrap it up burrito style, bake in the oven 10 minutes. I know these aren't very "grown up" but sure are tasty.

    I made chicken last night, i just put salt and pepper and bake it... if you want more flavor add a little garlic cloves while it's cooking with a drizzle of Olive oil.... My kids love chicken with Mushroom soup over it... so i make that for them and leave a piece plain for me...

    I take chicken breasts and put them a ziplock baggie with low fat salad dressing (Newman's Sesame Ginger or Balsamic Vinaigrette) I let it sit all day and drain the bag in the evening then grill them.

    I serve with a veggie (Asparagus, Cauliflower, etc) that's microwaved with a little water and salt and eat plain (my wife adds butter). I also make Uncle Ben's Wild Rice or some Brown Rice to go along with that. If you throw in a bouillon cube (chicken or beef) it flavors the rice so that you don't have add butter and stuff to taste different.

    Always a hit and the calories are not high (373 for 1/2 breast, one cup of rice and 6 Asparagus spears).

    i used to make taco chicken, use to low-sodium taco seasoning to cover the chicken then bake it. you can add tomatos onion and salsa.. any veggies you want, thats just what i liked. Also, if you have enough calories for the day you can top it with shredded cheese (or at least give cheese to the hubby and kids!) also mrs dash has some great chicken marinades that work in 20-30 minutes!

    I just tried a new one tonight and my husband and I loooooved it! I used frozen boneless, skinless chicken breasts. I poured the corn flakes in a large baggie to crush them. We couldn't even tell they were made with cornflakes!

    CRISPY BAKED CHICKEN

    1 frying chicken, cut into serving pieces
    1 c. skim milk
    1 c. corn flakes
    1 tsp. rosemary or seasoning you prefer
    Black pepper to taste

    Remove all skin from chicken; rinse and dry pieces thoroughly. Dip in milk. Mix corn flake crumbs with rosemary, pepper and/or other seasonings. Roll chicken in crumbs. Let stand briefly so coating will adhere. Place chicken in oiled baking pan. Do not crowd pieces. Bake at 400 degrees for 45 minutes. Crumbs will form a crisp "skin".

    Garlic Parmesan Chicken

    1/2 Cup Parmesan Cheese ( jar kind )
    1 pkg Good Seasons Italian Dressing
    1 tsp Garlic Powder
    6 Skinless Boneless Chicken Breasts - approx 6 oz each

    Mix dry ingredients together
    Dip Chicken Breasts in water & roll in dry mixture
    put into a baking pan ( 13 x 9 is good )
    Bake at 400 for 20-25 minutes.

    Enjoy.

    This is 3 W.W. Pts per Breast-if Breasts are larger add a PT to accomodate

    This is excellent and moist-yummy. We eat this a couple of times a week
