Hi Everyone,
I'm just looking for some really quick, fairly easy low calorie dinners, the last thing I want to be doing after work (like a lot of people) is spending a good chunk of my time in the kitchen (the weekend is good for cooking). Any suggestions or any favourites you might have would be greatly appreciated, thanks!

I usually buy the low fat frozen dinners, they're cheap & pretty good. There's only certain brands and foods I like though, it varies for everyone.0

Try doing a google search for healthy crock pot ideas (or go to skinnytaste.com and look for crock pot recipes). I love my crock pot because once you set everything up before work you're done. When you come home, BAM! Food is done.
This http://www.skinnytaste.com/2011/12/crock-pot-chicken-enchilada-soup.html is the last thing I tried and it was really good!0 -
Wasa Hearty Crispbread with canned tuna or salmon and Laughing Cow cheese.
Protein shake, fresh fruit, 1-2 cups of frozen vegetables (boiled without salt) and scrambled plain egg whites.
Turkey and low-fat cheese on Arnold's whole wheat or multi-grain sandwich thins.0 -
That sort of depends on your definition of "low calorie."
I made a super easy dinner the other night, the resulted in a few leftover servings.
I made taco salad/tacos. 1 lb lean ground beef browned/drained/patted + Ortega taco seasoning. Warmed hard taco shells broken up and mixed with the meat. 1/4 cup shredded cheese per serving, a tablespoon of Wholly Gaucamole, plus lettuce and tomato clocked in right around 500 calories per meal.
Simple, quick, tasty.0 -
lemon dill salmon with asparagus is a favourite around here
also, I make huge batches of turkey chili on the weekends and freeze it for lunches and quick dinners. it's about 380 cal per serving0 -
I usually cook something big on the weekends and then freeze it in indivdual portions. This way I can just pull something out during the week. This weekend I made salsa chicken in the crock pot. skinnytaste.com has some great ideas for things that freeze well.0

Tomato soup (with pureed white beans to be creamy)
Veggie frittata (like quiche, with no crust)
Stir fried veggies over microwave rice
Baked potatoes with cottage cheese or greek yogurt0 -
Thanks for all the great ideas! Keep 'em coming!0
