Double Chocolate Chip Muffins (dairy free)

This recipe was originally inspired by a Jillian Michaels one. But i changed a lot of the ingredients to make it more low calorie, and in my opinion more delicious by making it more chocolately :)

Ingredients:

1 1/2 cups wholemeal flour (I use Indian Atta Flour which has a nice texture)
1 cup rolled oats
1/2 cup dark chocolate chips (the sort that don't melt in the oven)
rind of one orange
juice of one orange
2 tbs agave syrup (use honey if you like or sugar, but you'll need to increase the quantity and the cals will be higher)
3/4 cup unsweetened apple sauce (i make my own by just stewing and pureeing apples)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup low fat coconut milk
2 tbs unsweetened cocoa powder


Mix all ingredients together. Pour into 12 muffin cups. Sprinkle a few extra chocolate chips on top for presentation
Bake at 200 degrees C (or 400 degrees F) for about 18 mins.

Depending on your specific brands these come to only about 160 calories. They can easily be made vegan too if you use something like carob instead of chocolate, or some kind of dairy-free chocolate or even cocoa nibs which would be delicious!
