GF/ PCOS/ Low Carb/Diabetic People- I need a big favor

I'd really appreciate being able to see diaries for anyone who is GF- (requirement) and diabetic or low-carb/pcos (preferably). I'm looking for ideas on what YOU eat to get upwards of 2800 cals.

I already know about peanuts, oils and avocados.:)

I'm looking for real-world lifters who are eating between 2000 and 2800 cals a day. I'd really appreciate the help- and promise to not judge you or your diary lol
