Had to share: Baked Potato Soup Recipe

Into the crockpot went:
-5 large potatoes chopped with skins (53oz)
-2 medium onions (9oz), chopped
-2 medium carrots , chopped
-3 large stalks of celery, chopped
-4 red. sodium chicken bouillon cubes dissolved in 4c water
-2 extra cups of water
-1 can (12oz) non-fat evaporated milk
-2tbsp minced garlic (Spice World, in a jar)
-spices to taste: sage, cayenne pepper, pepper, rosemary, garlic powder (roughly 1/2-3/4 tsp each)
-1tsp garlic salt
-1tbsp corn starch
-1tbsp flour
-10oz ham (big pieces on top of mixture) (just threw in all my leftovers, but you could do as much or as little as wanted... or even do bacon)

I then let it simmer on low for 7ish hours. When I got home, I took the ham off and ran the rest through the blender in batches and then put it back in the crockpot. I diced the ham and mixed it in again.

When it came time to serve, I topped each serving with 1/4c of Kroger's 2% shredded cheddar and 1-2tbsp of plain greek yogurt. DEFINITELY didn't taste low-fat or low-cal! Yum!

Makes 11 servings of 1c each approx.

Calories: 200
Carbs: 38
Fat: 1
Protein: 12
Sodium: 751
Fiber: 3

    I have made more or less the same thing, and it is SOOOO good. It's perfect for winter time when you come inside after being out in the snow.

    Anyway, I like to add the dairy, including the evap. milk at the end. For some reason, if I throw it in at the beginning, it curdles a bit.

    Yeah, I had that problem, but it was okay once I blended it up. Next time I'll try adding it at the end. Thanks for the tip!
