Sweet Potato Pancakes/Waffles
I just stumbled on this recipe on bb.com, thought it looked good! I haven't made them yet but let us know how they are if you do try them.
Ingredients
150 grams Sweet Potato, mashed
1 scoop Whey Protein (I like to use either vanilla, chocolate or cookies n' cream)
3 Egg Whites
1/2 tsp Baking Soda
1/2 tsp Nutmeg
1 tbsp Cinnamon
1/4 cup chopped Walnuts (optional)
Directions
In a large bowl, mix all ingredients until smooth.
Cook batches in pre-sprayed skillet/waffle maker on medium high temperature until bubbles form on the surface, then turn over and cook until dark golden brown.
Serve with cinnamon and sugar free syrup.

I'm guessing it is. The 150 gram serving of sweet potatoes is about right and can vary depending on the protein powder.
I actually made these this morning post-lifting and it was really good actually. I need something sweet after I lift anyway and I was able to add 1/4cup of reduced calorie maple syrup. The only thing I wish I would've done was use a blender to mix it up, otherwise delicious.
