    The only problem is that it is a huge waste of energy to heat up and oven and bake only two cupcakes... Better to make a whole batch and freeze them in pairs... Less time consuming too! I do have a recipe for a microwave cake that is made in small size amounts, that is pretty decent when eaten warm...

    I figure it is worth the extra wattage NOT to have a bunch of extra cupcakes around calling my name.

    I entered the ingredients into a recipe here and it comes out to about 310 calories for the 2. This doesn't include the frosting or chocolate chips. Plain, just the way I like 'em.

    Has anyone tried this one:

    3, 2, 1 Cakes. (3 tablespoons mix, 2 tablespoons water, 1 minute cook time)

    1 Angelfood cake mix
    1 Cake Mix (any flavor)
    2T Water

    Put the cake mix in a zip lock bag and mix well. For each cupcake remove 3 tablespoons of the mix from the bag and add 2 tablespoons water, Mix well and put into a microwave safe container. Microwave for 1 minute. Done!

    Made them today; they are The Yum! And if you ever get tired of plain chocolate (as if), try subbing a fruit infused olive oil (I used lemon) for the vegetable oil or throwing in a little cinnamon with the frosting.

    Gotta love a treat that won't submarine your day if you "accidentally" eat the whole batch.
