Any good recipes for plantains?

I haven't ever tried them and I'd love too, but every recipe I find online involves a tub of oil for frying. I'm sure there's got to be a healthy way to cook these, right?

I never tried, but when I used to work at Pizza Hut, one of the workers accidentally left his in the warmer. I think baking must be a method of cooking them?

You can make mongoo(not sure if i spelled that rite)

you boil the bananas and then mash them with fresh garlic in a mort and pestle with a little salt and lite olive oil..

so delish.. i work with a lady who makes this all the time.. very yummy..
