    where are you from? here they sell it at bulk barn, but likely any health food store would have it

    yep sure-

    Ingredients:
    - 2 oz cream cheese (light) ( 4 Tablespoons)
    - 2 eggs
    - 1 T sugar or 1 pack stevia
    - 1/2 teaspoon cinnamon
    - 1 T coconut flour (this is optional, I added it in because I just bought some on the weekend and wanted to try it out, it's not in the original recipe)


    Directions
    Put ingredients in a blender or magic bullet. Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour 1/4 of the batter into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter.

    Makes 4 large 6-inch pancakes

    I found coconut flour in the "Healthy Market" area of our chain grocery. I looked at WalMart but it didn't have it. Not sure if you have a HyVee where you're at, but that's where I found it.

    I wonder if there's something else you can and to it to provide some "bulk" to make fluffy pancakes.
