Quick & Easy Fish Tacos

This makes 2 fish tacos.
Ingredients:
3 oz Mahi mahi
2 Guerrero white corn tortillas
Dole cole slaw mix
1 tbsp. Daisy light sour cream
low sodium taco seasoning (McCormick)
drizzle of extra virgin olive oil
lime wedges
**Season Mahi mahi with salt, pepper, 2 tsp. taco seasoning, and drizzle with olive oil (so it doesn't stick while grilling). Grill until opaque and flaky. Meanwhile, heat tortillas in microwave or on grill. Mix light sour cream with taco seasoning (more or less depending on your tastes).
To assemble: Cut fish into 4 equal strips. Place 2 strips of fish (about 1.5oz), 1/4 cole slaw mix, and a spoonful of sour cream on top of warm tortilla. Repeat on other tortilla. Squeeze lime over both tacos. Fold over and EAT!

Ok... I am making this tomorrow! Mmmm!
I have all of the ingredients except for the lime and
sour cream (another trip to the grocery store).
I wonder if broccoli slaw would be good with it?
I always buy broccoli slaw and disguise it in my
hubby's salads so he'll eat raw veggies! hee hee

having it tonight too! I found a recipe for herbed
mahi mahi that I'm going to try (can you believe I
found it on Dummies.com - - haha!). It looks

I'm sure broccoli slaw will work great. The texture and crispness is about the same as the cole slaw mix. I'll have to try that one day. Thanks!0
