Uncured bacon. Whuh??

What is uncured bacon? What does it taste like?

I'm not a big bacon eater, but been seeing it a lot lately and not sure what it is???

    Cured bacon has been brined/smoked to preserve longer. Uncured... is just natural (may be salted or not). I think that uncured bacon tastes tons better than cured.

    The biggest benefit for uncured bacon is that it is free from added nitrates, which are bad. However, I also try to look for bacon from distributors that treat their pigs humanely and do not use antibiotics, etc. Applegate Farms is one good national brand.
