Egg on bread with a twist

Got inspiration from another web site, but tweaked it myself.
preheat the oven to 200C.
Toast 1 slice of bread.
separate an egg.
Whisk the white to very firm peaks.
Thinly spread some tomato puree on the bread, add herbs of choice (sage is good) then a slice of chicken.
Put the whipped egg white on top and then place the yolk in the middle.
Cook in oven for 5-7 minutes until the white has a golden brown crust, the yolk should be warm but runny.
Total calories about 200

That sounds great! I can't quite imagine how the eggwhite would turn out - kind of souffle-ey I'd imagine.
