Hi everyone,
I am in my final year at university and am trying to be really health (low calorie etc) but I dont really have the funds or time to do this everyday. So my aim is to batch cook healthy meals which can be frozen!
So far I have done chilli con quorn (196 calories per portion), low fat cottage pie, low fat lasagne, bolognaise ... all using quorn (I am not a vegetarian but quorn is cheaper, lower in fat and I am less likely to give myself food poisoning!)

Does anyone have any other ideas?

  • Soup! :) I'm forever making batches of soup and freezing them, plus the possibilities are endless for flavours, and veg are pretty cheap :D

I'd of suggested all of the above, also soup's and curry, I batch cook all the time but cannot for the life of me think what's in the freezer right now!!!

I make bean chilli - tin of Mexican beans, tin of lentils, tin of tomatoes, packet of chilli mix (all from Asda!) and you just whack it all in a pan and cook until the sauce thickens a bit. Costs about £2.50 and I divide it into 6 so it works out at 170 cals a portion.

Makes a nice change from quorn anyway :)
  • oh that sounds lovely! will definately try that one! x

I cook up a big batch of chicken breast every week and freeze. My lunch everyday is spinach salad w/the chicken, feta cheese and balsamic dressing.
I also boil up eggs to have ready for breakfast..
Soup is always a good choice too.
