Low Carb Recipes

Hi all i hope you can help...

I am trying to do a low carb diet but all i seem to be eating at the moment is chicken, pilchards, stir-fry or veg then snacking on fruit and its starting to get a bit boring :-(

I have seen the cauliflower mash idea so will give that a try so was wondering if somebody could recommend anything else?

Im not a huge fan of fish or eggs which makes it a bit harder :-S

    There are tons of options - all you need is protein, vegetable and fat... it doesn't have to be complicated. Don't limit your meals into the "traditional" food; for example, breakfast doesn't have to be eggs, it can be leftovers from the night before. One of my favorite breakfast options is some shredded sauteed cabbage mixed with some cooked pork breakfast sausage (local, free of nitrates and additives). It is very filling and satisfying.

    I love turnip or swede chips (fries if you're American!) Very low carbs, you can coat them in oil rather than the spray used in this recipe. A great side.

    I often make up a big batch of ratatouille! Its easy and yum, all I do is fry my onion, carrot and garlic in a few drops of olive oil, add dried italian herbs then add my veg (courgettes/zuchini, aubergine/eggplant. peppers, sweetcorn, green beans and mushrooms and let it cook. Finally i add spinach and broccoli. Add some fresh basil and have it with my protein! I make up a batch and freeze it so I then have it whenever I want.

    The other ting I do is used herbs and spice to jazz up my veg:

    carrots/parsnips and coriander/cilantro
    peas with mint,chilli, garlic and coriander
    green beans with mint
    cabbage with cumin
    I love grilled veg....sometimes add dried italian herbs to those too
