pumpkin muffins

8.5 oz corn muffin mix
1/2 c canned pumpkin

prepare muffins as directed, with pumpkin mixed into batter.

I used a banana muffin mix and it came out great, with a noticeable, but not overpowering pumpkin flavor in the muffins. Not to mention the pumpkin has a lot of great vitamins and stuff. I think I'd try this with chocolate chip muffin mix (imagining chocolate chip pumpkin muffins....:love: ) I don't know what the nutrition is with the pumpkin, and I haven't tried to substitute egg beaters for the egg and applesauce for the tablespoon oil called for in the muffin directions. Let me know if anyone tries it that way.

    I made these with Dark Chocolate Cake mix and they were really good. I put them in muffin tins and make cupcakes for portion control. I just mixed the pumpkin and cake mix and nothing else.

    I make pumpkin muffins using pumpkin quick bread mix and unsweetened applesauce and nothing else.

    Using real pumpkin is probably much healthier though :tongue:
