Joan's 10 Veggie Soup
This is my version of the Weight Watchers Vegetable Soup
1 Large bottle of V8 Juice or Clamato (I like to switch these the flavours)
1 Small Head of Cabbage (Diced or shredded)
1 Small Can of Italian Tomatoes
1 Small Pepper diced (Switch these colors too)
1 Large Leek (Chopped)
3 Baby Bok Choy (Chopped)
Handful of Fresh Baby Spinach (Chopped)
2 bunches of Green Onions (Chopped)
2 Stalks of Celery (Diced)
2 Large Carrots (Diced)
Pinch of Parsley (Chopped)
Cook for 8 hours in the slow cooker on HIGH. Add your own spices and herbs on taste.
ENJOY WHENEVER and ALL DAY LONG!
*If you need a bit of starch in your soup. Toss in a 1/2 cup of Cooked Basmati Rice.
