I've been put in charge of bringing appetizers for Mother's Day. Any good suggestions?

You could make spinach dip or spinach and artichoke dip. There are lots of recipes online. Just customize it using fat free options and whole wheat bread or pita chips.

I brought fresh veggie pizza to Easter, and it was a hit.

An easy one (not real low fat) is cream cheese with jalapeno pepper
jelly poured over the top served with crackers. Mmmmm

A healthy appetizer that's always a hit is bruschetta!
There's a link on Epicurean.com with a bunch of recipes for bruschetta
(some with artichokes or asparagus or roasted red peppers - take your
    pick). Here's the link:

Hummus w/ pita chips another winner.

Now you got me started....

You could do a "kabob plate" with either fresh fruit or veggies. Provide an assortment of either fruit or veggies, along with toothpicks, or actual kabob skewers, and have people create their own kabobs. Dip on the side could also be an option.
