Making your own healthier frozen dinners?

Somebody just wrote a topic questioning how healthy frozen dinners really are and that got me thinking.
Anyone make their own frozen dinners? What do you make? Does it heat up well? I used to make breakfast burritos but when I would heat them up they would get a bit juicy and the tortilla would be a bit slimy. Any tips or suggestions?

    Cook ingredients seperate and let them cool before putting them together. Chicken with rice and veggies. Noodles don't freeze well so if you want something like that use spagetti squash, pasta, quinoa or orzo. A couple Turkey meatballs, 1-2 oz of pasta, then pour the cooled sauce on and freeze.
    Tons of veggies, sauteed and cooled over whole wheat pasta with a light lemon-chicken broth sauce. I use low soduim chicken broth, lemon, garlic, little olive oil and hot pepper.

    I don't make single serving stuff but sometimes I will make Mac and Cheese or spag and freeze it in a casserole dish. Just let it thaw, pop it in the oven to warm it up and i have dinner for the whole family in about 20 minutes.

    I make individual servings for work. I make rice and barley, cool, portion and freeze into 1/2 cup containers. Then I take ground turkey and make a variety of different combinations. Tomatoes, basil, garlic, onions for a more Italian flare, or black beans, corn, tomatoes, onions, peppers, for a more Mexican style. I let that cool and portion into 1 cup containers. I mix and match to take for my meals.
