Sweet Potato Fries - overnight?

Hey y'all, do you think that I could cut up my sweet potato fries tonight and put them in the fridge till lunch tomorrow? I know that you can't with Irish potatoes because they turn black. Any suggestions?

    Last time I made them they lasted about a week in a tupperware container, so I don't see why overnight would hurt. Are you baking them first?

    No, I was going to put them in cut and seasoned ready to bake for tomorrow. Ya think that'll work? Normally, I would just try it but I only have 2 left and can't get to the store till the weekend.

    Sorry for the delay, did you end up baking them? It's a bit late now :(
    But yeah, last time I made them I baked them first, and then they stored just great (for future reference). The nice thing about fries is they tend to keep better than fresh cut potatoes.

    I had family over, got in my new Malibu Pilates AR chair, installed it. Did groceries, cooked for the hubby...I didn't get to it. Maybe tomorrow. I think I'll try it anyway and let you know. I'm thinking that if they keep and bake great this way (letting them sit in fridge overnight before cooking) they may soak up more flavor. You know marinade. I'll let you know.
