Stuffed Pepper Soup

Had this tonight, it was amazing!

Stuffed Pepper Soup
6 Servings
Ingredients:
1 pound ground lean turkey
2 green bell pepper, chopped
1 cup finely diced onion (I used 1.5 c)
1 (29 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (14 ounce) can chicken broth (Or 2 bouillon cubes with 14 oz water)
1/4 teaspoon dried thyme
1/4 teaspoon dried sage
salt and pepper to taste
1 cup brown rice
What you'll do:
In a large stock pot brown ground meat. Drain fat and add pepper and onion.
Cook until onion is translucent, about 5-7 minutes.
Add tomatoes, tomato sauce, broth, thyme, sage and season with salt and pepper.
Cover and simmer for 30 to 45 minutes, until peppers are tender.
In another saucepan cook rice according to package directions.
Cook until rice is tender and then add to soup. Heat soup through and serve.
I added a little low-fat shredded mozzarella cheese on top of mine Delicious!

Thank you for posting this... sounds like a great recipe and I've been looking for new ones. Even healthy recipes tend to range 300-400 cals and since I eat 6 times per day each meal needs to be in the 150-300 range for me. I'll give this one a try!0

No problem! I also added some mushrooms to mine to give it more flavor
I didn't measure how much the serving was, but it was at least a cup of soup and it's very hearty with all the meat and rice. I was full after! Even with almost 1.5 servings though you'd be barely over 300. Hope you like it! I can't wait to have leftovers for lunch0 -
