I need recipes that are vegetarian, low calories, low carb, low fat. Difficult to find on-line, but if anyone has any ideas tried or not, I would love to hear of them Thanks everyone. I love this program! Very motivating.

    Sometimes I make chili- with all fresh veggies, and don't add anything canned/NO oil, and just a little of the ground tofu. It's 75% fresh veggies, I add lots of peppers and even mushrooms. I really like it, I hope that helps

    I definitely recommend this cookbook:

    I made quite a few delicious recipes from that book, and I really like the fact that the nutritional information is included for each serving. Stay away from the pumpkin scone recipe and beer bread recipe. Those both turned out as disasters for me!

    There are quite a few other low-carb vegetarian cookbooks that I've seen on the shelves. Here is another one I've gotten out of the library:

    If you like to experiment, just try some tofu& vegetable stir-frys over a bed of quinoa or brown rice. Most vegetarian Asian cuisine cookbooks are by nature low-carb (as long as you serve it with brown rice or some other wholegrain, I prefer buckwheat)
