Vegetable Bake with Couscous & Feta Crust - 450 calories

This recipe yields 4 servings!
Ingredients:
Obviously substitute the ingredients for the brands at your supermarket.
Method:
-Chop the zuchini, onions, cherry tomatoes how ever you want.
-Drain the olives and capers. I kept the olives whole and finely chopped the capers.
-I kept the garlic whole, with the skin on. Once roasted they easily pop out the skin and melt in your mouth, the strong garlic taste is not there!
-Put all the ingredients in a baking dish and add the olive oil, herbs, black pepper, salt and gently toss.
-Put the dish in a pre-heated oven (250C) and let it roast until the vegetables are nicely browned.
While you're waiting for the vegetables to roast you can get on with the couscous topping.
-Add the couscous to a boiling pot of water, add the chicken stock cube (optional) and cover.
-Once the water has almost disappeared, turn off the heat, cover with a cloth, put the lid on and let it sit until the water has been absorbed.
-Finally grate the feta/greek cheese and add it to the couscous - this mixture itself is so delicious, so comforting!
-Dollop the couscous mixture on the the vegetables and bake for around 10 minutes (on highest setting) or until the crust is lovely and golden brown.
This is what you end up with:
Add whatever vegetables/spices you want but you have to give this a try, its really tasty. 450 calories for a dinner isn't bad at all!
