I keep reading recipes that say use 'good cinnamon.' Where do you find said good cinnamon and what makes it differnet from the stuff I've been buying for the last 30 something years?
Thanks.
Thanks.

from what I've read:
typical cinnamon (cassia) is made from a 'cinnamon like' bark. it is similar to cinnamon, but much more economical to produce, and it's what is found in most grocery stores.
'True Cinnamon' (from Sri Lanka) has a much more potent flavor, this can be found in most gourmet kitchen stores, or on the net.
I get Saigon Cinnamon from Costco, decent price, and a step up from the stuff in grocery stores.
basically the difference between vanilla extract and real vanilla.0 -
I recently bought true ceylon cinnamon and it's so good. It definitely has a different flavor profile than the cinnamon you get in the supermarket(which I also still buy)The one I bought isn't as strong as cassia and it's kind of sweeter and more mellow. It's nice.0
