Getting frustated

So I joined MFP a little over 2 weeks ago and I dropped 7 lbs like it was nothing (without exercising). This past week I have been working out everyday (except monday since I am working 11 hours and I just don't have time, besides I need an off day). Since working out I have gained .6 back. I feel that two weeks is a little too soon to be struggling and I feel like I am doing something wrong. And I know .6 is nothing, and I probably shouldn't be as discouraged as I am, but still its annoying when your start moving more and expect better results.
My cals are set at 1200 and after reading posts over the last two weeks I gather that number is a little too low. Some days I am hungry and others I really don't want to eat more. Should I increase my cals? I drink water like crazy, because I have kidney stones and I have to. I really try to stay within my cals (1200). Some days I go over, as little as 30 or 100, but I'm still eating way below my BRM. It's not like I am cheating and not logging what I eat. I'm logged in several times a day and anything I put in my mouth is recorded.
