Daily caloric intake

So i'm a student stuck in a desk all day but try to get in at least an hour of strength or cardio a day.
But the thing I'm struggling with is meeting my daiily caloric intake number. I'm finding I usually eat about 1000 and my goal is about 1500 but im satisfied and full with just 1000.

What would you suggest?

    Add olive oil to ur food, or eat some nuts, alvacados..etc. healthy high calorie foods!
