Low Cal, Low Carb, Gluten Free Breakfast Sandwich!

First of all, I need to give credit to mlb929 for posting the recipe for the Cloud Bread yesterday: http://www.myfitnesspal.com/topics/show/526000-cloud-bread-gluten-free-low-carb-high-protein-low-calori

That post inspired me to try it, and to make a breakfast sandwich this morning! It came out really good, so I thought I'd share for those of you who have cut out bread and are missing it, or are gluten free, low-carb, etc! :smile:

2 halves Cloud Bread - (http://www.food.com/recipe/carb-free-cloud-bread-411501 - link to original recipe on food.com)
1 wedge Laughing Cow cheese (I used garlic & herb)
2 slices roma tomato
2 slices Jones Dairy Farm 99% fat free Canadian bacon
1/4 cup egg whites (I use Hanaford Egg-mates)

Spread cheese on each half of the Cloud Break, then add egg white, bacon & tomato slices, top with other half of bread; sprinkle with desired seasonings. Enjoy!!

Nutrition Facts:
168 calories
6g carbs
6g fat
20g protein
4g sugar
711g sodium

**my bread didn't come out as thick and sturdy as it should have - I don't think I beat the egg whites long enough. Will try again and see what happens, but they'll do for now! :smile:

    Yum! I guess I am gonna have to make some of the cloud bread tonight cause I really want a sandwich!

    Yeah!!! The whole recipe itself has 6g carbs, BUT the cloud bread itself only has 1g!!! I will need to experiment, as I said mine came out very thin and flaky. I messaged the original poster on food.com and she said you have to beat the egg whites REALLY well, until they are very stiff, otherwise it will spread out when you put the mixture on the cookie sheet. Good luck!! :smile:

    I've seen the recipe here before but never tried it but I have also heard that if you let them sit over night it gets to be more like bread. I just want to feel halfway normal with my family when we have hamburgers or a BLT! LOL

    Thank you for that recipe! I am going to try making them again today, maybe I will use cream cheese this time. I am excited to get these to come out a bit thicker, too!
