Carbohydrate Intolerance?

I have a carbohydrate(sugar) intolerance but I feel like I eat a lot of carbs in one day. I try to stay away from sugars as much as I can but I take a stimulate medication (adderall xr) for ADD and if I don't eat something substantial I get terrible stomach aches and cramps. I also cant have any diary once i take the medication as well, its like it intensifies my intolerance ten fold. Is there anything I can substitute for breakfast to cut back on my carbohydrate intake that will still take my body time to digest? I unfortunately am a broke college student and my doctor recommended I see a nutritionist but I can't afford it anymore. I underwent a barrage of tests from various specialities not too long ago because of all the digestive problems I have. As of recently I have perfect blood pressure, slightly elevated triglycerides (before weight loss) and elevated cholesterol that was still within the normal range and a slightly elevated insulin level but doctors never expressed to me that I have type II diabetes. I don't know if that info makes a difference, just wanting some advice. Thanks.
