Changing calorie amounts, is this enough?

I was reading Silverbullet07s thread about calorie intake. I've been struggling with the topic in my mind. I didn't want to threadjack his topic so here goes.
Here's some history. I'm about 6'1 and change. Jan 2011, I was 262. I did some P90X for a few months until spring rolled around and I could start golfing. I didn't work out, besides walking the golf course and didn't pay close attention to what I was eating and hovered between 245 and 250.
Late fall 2011, I did some sporadic working out and stabilized my weight closer to 245. I started P90X2 and really watching my intake Febuary 2012. I targeted 1800 calories a day and hit a low of 232 and change back on 3/5. My P90X2 routine changed right around that time to include alot more resistance work then the previous phase. I also got a little flakey with my eating and I bounced up to 235ish. I'm thinking it's mostly water but who knows. I didn't go off the deep end with my eating and definately not enough to gain that much weight back in fat.
I picked up a Body Media Fit and have been using it for about a month now. On the days I do nothing I have a burn rate of about 2900 calories a day. The way things work out I burn about 3200 calories 4 days, 4K - 4200 2 days and 2900 1 day a week.
I was at 234 this morning, by eating closer to 1800 and cutting back on certain carbs, again I think this is just water/food in the GI track changing.
Things I have noticed. I'm definately smaller now based on my clothes fit. I'm also tired alot and haven't been sleeping good for the last few weeks. My numbers in my workouts are improving, ie more reps or more weight. My endurance when working out is getting better. I play volleyball two nights a week and get through it fine, in fact I'm playing better now then I was 6 weeks ago. Hence my confusion.
I've known for the last month that my daily deficit was over 1K and hits 2K at times(I did start to eat a little more on VB days, not alot though). So I should eat more. But I was losing weight at a fairly steady pace which was still close to 2 lbs a week. I'm not bonking in my workouts and see no signs of a platuea in my physical performance.
I changed my daily target to 2100 today and went over a bit. Cadbury mini eggs are evil but so tastey, thought I'll still have a 600 or so deficit for the day.
What I am looking for is thoughts on 2100 calories a day, is it enough etc. What should I expect to see happen? The reason I ask is if my weight spikes upwards do I 'panic' and cut back or ride it out for x amount of time? What would x amount of time be? I don't want to short circuit things because I bailed on the increased intake because I don't understand the adjustment period that I assume will happen.
I apologize if these questions seem foolish but the scale going down is a strong motivator for me and it going up is a demotivator. I do look at the trend over the course of the week BTW. I don't stress about is moving up 1 day because in all likely hood it will drop again in the next few days. It those periods where I gain a few lbs over the course of a week or 2 that I start to doubt what i'm doing.
