Vegan Binding substitute

My sister tried using flax seed powder instead of egg as a binder when she made breaded eggplant, she said it didn't work out so well. Does anyone have advice on the best way to use this technique or another ingredient to use in place of the egg? Thanks!!

For baked goods (sweets mainly, and biscuits) I use banana or applesauce (unsweetened). Tapioca starch is my other go-to for binders. If you are looking for an egg replacer for battered foods go for baking powder (double check vegan) and use lots of it.0

When I make breaded eggplant at home its just flour and soymilk batter, then a dip in bread crumbs.
