I'm looking for something new to start eating and I hear pitas are good. How do ya'll dress up your pitas and what kind do you use? Thanks!

    My absolute favorite recipe right now is a whole grain pita stuffed with lots of fresh spinach, I toss in some dried cranberries, I grill some portobello mushrooms with a little soy sauce, and then I just drizzle a little greek/feta dressing on top....it's sooooo good!!!

    You also can never go wrong with pita and hummus too!

    I'm so in love with whole wheat pitas! :heart: I use them for lots of things...
    refried black beans with some mozz cheese warmed up in the microwave
    laughing cow swiss cheese, again in the micro
    peanut butter and bananas
    roasted red pepper hummus
    soy crumbles, salsa, sour cream
    scrambled eggs and hot sauce
    falafel!
    ...just to name a few!

    This is my new most favorite recipe. Its so easy and you can add what ever veggies you like. Also I use classico basil pesto instead of the tomato pesto.

    INGREDIENTS (Nutrition)
    6 (6 inch) whole wheat pita breads
    1 (6 ounce) tub sun-dried tomato pesto
    2 roma (plum) tomatoes, chopped
    1 bunch spinach, rinsed and chopped
    4 fresh mushrooms, sliced
    1/2 cup crumbled feta cheese
    2 tablespoons grated Parmesan cheese
    3 tablespoons olive oil
    1 pinch ground black pepper to taste

    DIRECTIONS
    Preheat the oven to 350 degrees F (175 degrees C).
    Spread tomato pesto onto one side of each pita bread, and place them pesto side up on a baking sheet. Top with tomatoes, spinach, mushrooms, feta cheese, and Parmesan cheese. Drizzle with olive oil and season with pepper.
    Bake for 12 minutes in the preheated oven or until pita breads are crisp. Cut into quarters and serve.
