I have to retract myself on Shiritaki noodles: I tried them again tonight and my meal was lovely. Topped with a glass of wine and totalling less than 300 cal., I am happy!

Pasta with pesto, aragula, mushrooms, sundried tomato and parmesan

Shiritaki pasta - 1 bag - 226 gr 40 cal.
Basil pesto - 2 tablespoon - 80 cal.
Sundried tomato (not in oil), chopped up - 1 piece (half a tomato) - 18 cal.
Baby aragula - 2 cups - 20 cal.
Mushrooms, sliced - 1/2 cup - 11 cal.
Pepper - to taste - 0 cal.
Salt - to taste - 0 cal.
Grated parmesan - 1 tablespoon - 21 cal.
Total: 190 cal.

Rinse and drain the noodles thoroughly.

Boil noodles in water for 3 minutes; drain.

Over low heat. in the pot used for the pasta, add half of the pesto over, put in the sliced mushrooms and chopped sundried tomato sundried tomato. Stir for a few seconds, immediately add in the drained pasta and the remaining pesto. Add some freshly ground pepper and salt, to taste.

Remove from heat; add in the aragula; stir.

Serve, top with the parmesan (and additional pepper, if you like).

If you serve with a 5oz glass of red wine (106 cal.) , your meal totals 296 cal.
