Low Carb Pancakes (Gluten Free)
If you're watching your carbs, here's a low carb pancake recipe that I came across (on Pinterest). I tried it this morning and it is awesome! Next time I may increase the cinnamon slightly. I put sugar free strawberry jam on mine but that tripled the carbs - next time I'm going to try the Low Carb Blueberry Syrup recipe at the bottom of the page. I haven't tried this yet, but it looks pretty easy.
Ingredients:
- 2 oz cream cheese (light) ( 4 Tablespoons)
- 2 eggs
- 1 pack stevia (Truvia)
- 1/2 teaspoon cinnamon
Directions
Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour 1/4 of the batter into a hot pan greased with butter flavored pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter.
Makes 4-5 Pancakes.

Low Carb Blueberry Pancake Syrup
Ingredients:
½ cup blueberries
½ cup water
1 teaspoon lemon juice
1 teaspoon stevia powder (or more to taste)
2 teaspoons cornstarch
2 tablespoons water
Directions:
Combine the first 4 ingredients in sauce pan.
Bring to a boil, using a whisk to mix.
Combine cornstarch and 2 Tbl water, then pour into blueberry mixture.
Mix until thickened.
