I just had the BEST lunch!

So I eat a lot of salads, thats my token lunch. I try to get pretty creative with dressings and things because I get tired of using the same ones over and over again. Lately I've been eating a lot of "mexican" salads- dressed with salsa and a tbs of gaucamole to moisten and flavor the veggies. Soo good, yall should try that one too.

But today I got really creative and wow it paid off. I made a salad like normal (lettuce, radishes, onions, tomatoes, carrots-all the veggies in the house) and seasoned with Emril's Original Essence, pepper, and sea salt. Then, instead of dressing, I made an egg sunny side up, laid it on top of the salad, and then mixed everything together. The white cut up and mixed with the rest of salad and the warm, runny yoke drizzled over everything and OMG it was so good! Oh I also broke up six Roasted Garlic triscuits and added those. Seriously-WOW! And just under 300 cals- I am full and happy :smile:

Anyone else have interesting/tastey lunches?

    If I'm making my lunch in a real hurry I just chuck a salad together (any nice ingredients will do - I like grated carrot in mine) and then stick a tablespoon or two of balsamic vinegar and a tablespoon of reduced fat hummus in an dmix it all about a bit. It tastes like a really fancy dressing without any effort! Yours sound great too - I must try it :tongue:

    Yum!! I don't usually like egg yolks, but that sounds pretty dang good!
    I had a multi-grain english muffin with crunchy, all natural peanut butter and one of the snack containers of cherry light and fit yogurt! It was soooo good!

    I didn't have a really interesting lunch, just taco salad. BUT I'm extremely proud of myself because I ate my taco salad without the shell!!!!:noway: :flowerforyou: Yeah me!!!! :smooched: It was actually flavorful enough that I didn't add any salsa either. Plus I had water with lemon to drink AND got the lunch portion of salad!! :bigsmile:

    Yummmm....Meg that sounds like a great lunch! I'll try that one tomorrow. I'll also have to try the hummus idea too. :happy:

    Mmm I love hummus and balsamic so I will be trying that combo soon!

    And GREAT job not eating the shell- that is really something to be proud of :drinker:

    I go to Taco Bell and order the taco salad without the shell and they look at me like I'm on crack,,, Hehehe,,, :laugh:

    I gotta tell ya', runny egg yolk on chilled lettuce sounds grotesque to me. But if you dig it, more power to ya.

    I say it is very good. Tami says it is made in heaven. It is chickpeas (aka garbanzo beans) in a dip. and it is usually flavored with yummy stuff like roasted red pepper.

    I think the closest thing to compare it to is light bean dip. It very tasty and isn't weird or an acquired taste at all. I can't imagine anyone not liking it unless they were extremely picky. It comes in different flavors, I usually like the ones with lots of garlic.

    Like bean dip sorta, but better. I like it with a li'l olive oil and garlic on baked whole wheat crackers.

    A nice big 2 tbsp serving is only 50 cals, but it seems like more. 3 nice crunchy Kashi crackers and 2 tbsp of hummus is a great filling snack for under 200. :happy:
