Kheer (Rice pudding)

My sister-in-Laws recipe. Kheer is basically Indian rice pudding and is very easy and delicious to make. Hope you enjoy!
Ingredients:
1/2 cup uncooked rice (I use basmati rice)
1 litre milk (I used whole milk, I'm unsure how it'll turn out with skim milk)
1 can condensed milk
sugar to taste (read on for more details)
1 Cardimom's worth of seeds. Donot use the skin
optional ingredients
1 tbsp rose water (AKA Kewra. Can also use vanilla extract though I'm unsure how it'll turn out with it)
Method;
Note: Please use a metal spoon vs. a wooden spoon for this, I can usually tell a difference when sweet dishes are cooked with wooden spoon. Also, this dish, while easy to cook requires constant stirring.
Cook the rice with 3 cups of water on high heat till the water starts boiling. Once the water starts boiling, add the milk and cardimom seed. You only need 1 cardimom and you can take out all the seeds from it. While this is cooking, add the condensed milk and keep stirring.This is the point after which you will add sugar depending on how thick you wish the kheer to be. The thicker you plan to make, the less amount of sugar you want to add. Keep in mind that alot of sweetness will come from the condensed milk. Only add little amount of sugar at a time since the kheer will intensify in sweetness when it becomes thicker. I added about 1/4 cup of sugar but I made it really thick too.
Add Kewra and enjoy the rice pudding

ps: turns out just fine using just skimmed milk and no condensed milk.. a little thinner, but fine, and way less calories0 -
