Picnic Ideas?

Now that the weather is starting to warm up, I'm planning a hike to a lake with my fiance, and I want to pack us a picnic. Trouble is I cant think of anything but pita sandwiches and veggie sticks lol I really want to WOW him with this picnic, any awesome ideas?

you could do some wasa crackers with laughing cow light cheese spread on them. yum...and with the veggie sticks you could bring some spicy hummus or make your own, there's a good smoky chipotle hummus on allrecipes.com0

Cold chicken, maybe some potato salad or egg salad. If you are looking to keep it light with some chips and dip try low fat cottage cheese with ranch dressing. Mix it up so it looks like a dip. Try this website out.

For dessert try these 180 calorie cupcakes from Hungry Girl. They are just a devil's food cake mix combined with a can of pumpkin. Soooooooo yummy! Simple to make, but they do dry out easily, so keep tightly covered! Great source of Vitamin A and fiber, too!

Sandwiches made from 45 calorie whole wheat bread, chicken, slices of avocado or tomato, lettuce, etc and some chardonnay mustard.
Fresh veggies but bring a variety, not just carrot sticks and celery. Dip? I don't about that one. Maybe one made with hummus?
Maybe some cheese?
Fresh fruit salad made with watermelon, fresh pineapple, grapes, melons. YUM!
Dessert too? Make or buy a smoothie and freeze it in 2 containers to share, plus it will help keep the rest of your lunch cold.

Thanks guys! These all sound like great ideas! Now have so many ideas I dont know what to make! haha I'll have to let everybody know what I'll decide on! Going to browse the grocery and see whats on sale or what sparks my creativity0
