Hello to all!

I am just starting my third week of going vegetarian and maybe will make it to vegan down the road. I love all the meals I am cooking and I cannot be on any diet that locks me out of cooking or has tons of "No's" because I am a natural born rebel and will just do it if I hear "No you cannot have that."

I made a great soup that consists of root vegetables cut in pieces, four clove of garlic minced through garlic press, one onion minced or cut in fine pieces and lentil beans. First saute garlic and onion until caramelized in butter, then add the hardest root vegetables first, cover with water and cook for about 10 or 15 minutes, add lentils and cook until all is cooked about 30 minutes more. Keep adding water if needed. Before you are done add some canned spicy chopped tomatoes ( I add about 2 cans, but it depends on your taste. Serve with homemade soda crackers. I cook my crackers on the George Foreman grill.

I have lost about 30 pounds but have 65 to go and staying focused and determined sometimes hits a road block as I think this is going to take for ever. Then I have to ask myself how bad to I want to feel fabulous? I guess I better stay focused and stop the crazy self talk.
