I am not really a fan of raw carrots, but I'll eat them anyway because I know I should.
The other day I picked up a bag of carrot chips, you know - raw carrots sliced lengthwise...and on the back of the bag it had a little snack idea. Mix equal portions of fat free sour cream and salsa, and dip the carrots! A healthier version of chips and dip.
And you can't even really tell that it's fat free sour cream. You can use low-fat sour cream if you prefer. And if you mix it with a heartier salsa, like black bean and corn salsa, it's even better.
The carrots are 76 calories per 6oz portion, 35 calories for an 4 oz portion of Newman's Own black bean and corn salsa, and 75 calories for 4 oz of fat free sour cream. And that's a decent sized portion!
