No wheat spiced chestnut pancake stack (pic)

Ok so I just randomly made up the recipe for these this morning for my breakfast as I have chestnut puree to use up
They taste delicious, I love anything that reminds me of Christmas and these did just that
Ingredients:
1 medium egg white
70g Chestnut puree ( I used the merchant gourmet brand)
20g rice flour, or flour of choice
60ml skimmed milk
1-2tsp of ground mixed spices
1/2 tsp cinnamon
1sp baking powder
4g coconut oil to cook
Mix all ingredients, except the oil, in a bowl to a smooth batter. I left mine for about 30 mins as I got ready
Heat up the coconut oil in a large pan then turn the heat down to a mid range temp (I find this prevents cooking too quick)
Stack up with sliced apple, Fage 0%, agave nectar and sprinkle of cinnamon to make it look pretty!
The value of the pancake mix and oil came too
214 calories 34g carbs 5g fat 9g protein 4g fibre
Blob on the mix into whatever size you want and turn when cooked on one side

You could also use canned pumpkin, I would guess it is the same consistency as the chestnut puree comes in a can form and blends to a smooth paste!0

lemme get this straight...214 calories for how many of the cakes? the whole stack? what if I can't find chestnut puree? I can't eat pumpkin - glycemic index is too high, but those look sooooo goood0

Yep, thats for the whole lot of pancakes, not the additional things like the apple/agave
I didn't use the yolk to save cals, also the puree makes the mix thicker so not too much flour is needed.
