Has anyone baked with Stevia?

So i've only recently discovered Stevia in the shops here in the UK
I do a bit of baking, and would love to get into baking healthier items
Love my loaf cakes - banana is my fav as I have a dairy free recipe

Just wondering if anyone has baked with Stevia, and if you have, do you use the same quantity of Stevia to sugar as stated?

Any comments on how well Stevia bakes? I've heard some artificial sweeteners are not good in baking, and I wouldn't wanna waste Stevia if it doesn't work

    Stevia is a natural sweetener, fantastic one :-) it's a bit expensive, but quite effective.
    In fact, the sweeteners you would avoid are the ones which contain aspartame, which becomes toxic when you cook it.
    Regarding the measures, when a recipe tells to use 100 grams of sugar, I put 1 tbsp of Stevia, tastes the same :-)

    Stevia is generally sold in two forms : in powder : more used for decorating and after cooking, and the liquid form, for cooking.

    I agree, powder for sweetening drinks, cereal etc but liquid for cooking. I have used it many times and some things you bake may actually take a bit more liquid than the recipe calls for.

    You have to be careful with recipes and make sure you use the exact stevia they used.

    Where I am there are at least three types of stevia. One is 1 for 3 tsp equivalent, another is 1 for 1.
    Then there is one that is a sugar/stevia mix.

    I made brownies with stevia, but had to adjust the amount due to the recipe not saying which stevia to use.
    They came out fine once I figured that bit out.

    Baking with stevia powders can be tricky because they are all a little different. When I use them I have to taste test a lot. You will just have to experiment. Truvia looks and acts a bit more like sugar and works better, but it's not exactly stevia either. Its a sugar alcohol with stevia in it. I use both.

    Ive seen a half/half product which is sugar AND stevia, and also then a powder stevia from Canderel
    Dont think it's that popular in Northern Ireland yet......
    would love to find the liquid type online somewhere that isnt too expensive as I'd love to bake a couple of times a week for work
